Chef Paul’s Chef Knife is 1/8″ AEB-L stainless steel with our distinctive Grind Thru Cutlery where the entire knife is tapered from the spine to the cutting edge and then is chisel ground to make a very powerful cutting geometry. The burlap handles are both chemically and mechanically attached to the knife with marine grade epoxy and brass pins. The knife measures 13 5/8 inches overall with a 8 3/8″ sharpened edge. The height of the blade is 2 3/8 inches. The knife comes with the Wild Harvest logo on the Presentation side and Paul’s initials on the opposite side. Finally we add thumb scallops to this professional grade tool.
